Tasting

Colour

Golden, cloudy.

Scent

Ripe yellow fruit, apple, wild herbs, and mineral notes.

Palate

Medium-bodied wine with a good acidity. The palate is marked by flavors of quince, dried apricot, walnut and melon intermingled with medicinal herbs and mineral hints. The finish is medium long with a pleasant volatile sensation.

Pairing

Salads, grilled vegetables, spicy dishes, curries, and grilled meat.

Vineyards

This wine made from grapes of our vineyards that most suffer from the rabbits. They appreciate the high quality of the fruit just as much as we do. Unfortunately, they are often faster leaving us with very low yields.

Manual end of September.

Fermentation

Spontaneous in clay amphora whole bunches and juice.

Ageing

Six months in amphora on the skins and lees.

Bottling

Straight from the amphora, unfined, unfiltered. Minimum Sulphur addition.
