The name of our claret 5/4 derives from the co-fermentation of 4 different varieties: 2 parts Tempranillo (Cencibel) with one part Garnacha, one-part Airén and one part Malvar.

Tasting

Colour

Young bright cherry color.

Scent

Red berries paired with, citrus notes, herbs and licorice.

Palate

Savory, young with soft tannins and lively acidity. The flavors are marked by notes of cherries, red berries, wild herbs, butterscotch, and licorice. The aftertaste is silky and fresh.

Temperature

14-18ºC. Serve chilled.

Pairing

Antipasti, pasta, chicken, tofu. Vegan friendly.

Old organic bush vines grown on the meseta.

Manual at the end of September.

Fermentation

Spontaneous co-fermentation in open top stainless-steel tank of the 4 varieties together. 50% whole bunch and 50% destemmed.

Malolactic

Spontaneous in cement cone with 9 months of ageing on fine lees. Spontaneous in cement amphora with 9 months of ageing on fine lees. No fining, no filtration. Minimum Sulphur addition.
