Single vineyard. La Malvar is an indigenous grape variety which is almost extinct.

Tasting

Colour

Straw gold with green hue on the edges.

Scent

Subtle yellow fruit, aromatic herbs and freshly cut hay, mixed with citrus nuances, fine pastry and elegant toasting.

Palate

Elegant and fine on the palate with flavors of pear, white peach, wild chamomile, and aniseed. The finish is long marked by a discreet acidity and a lively minerality.

Temperature

14-16ºC.

Pairing

Seafood and fish, white meat and small feathered game such as partridge or quail.

Vineyards

Single vineyard. Dry-farmed bush vines at 750 meters above sea level with a unique exposure and low yields. Limestone soil.

Variety

100% Malvar, native variety.

Harvest

Manual at the end of September.

Winemaking

Cold maceration of the grapes for a few hours. Gentle pressing. Spontaneous fermentation of the juice in clay amphora and 2 new French barrels. 10 % whole bunches are added to the amphora.

Ageing

Sur lie in amphora and barrels until April with weekly batonage.
