‘100% Malvar. North-facing vineyards in Dosbarrios (Toledo). 1.5 ha of old bush vines (more than 60 years old) on limestone soils with some gypsum. Organic viticulture. Hand- harvested. 70% fermented spontaneously in tinajas (with 10% of whole bunches), and the remaining 30% in French oak barrels. Aged on its lees until February, then blended in the tinajas. Malvar was a very abundant early- ripening white variety in the region during the 17th and 18th centuries. 4,000 bottles. Tasted blind. Clean, with aromas of apple, water pear and lemon. An evident impact from the oak, yet with a herbal touch too. On the palate, saline, with delicate notes of lychees and stone fruits on the back palate. Textural and creamy. It has a hint of chalk. I love the combination of the tinaja and the wood. Malvar is a minor variety considered neutral and somewhat inane that in fact shows enormous potential with this wine. (Ferrán Centelles)’

100% Garnacha Tintorera. Vineyards in Dosbarrios (Toledo), in the cooler, later-ripening areas. Old vines (>30 years old) on limestone soils. Spontaneous alcoholic fermentation in a stainless-steel vat. Short maceration and malolactic conversion in cone-shaped concrete vats. Aged for 12 months on its lees in the same vats. 5,000 bottles.
Tasted blind. A touch of meat, ripe black fruit, pepper and thyme. The palate is medium- bodied with integrated and compact tannins. It is fresh, looking for an aerial style and with very moderate alcohol. The use of concrete instead of oak suits it very well. In line with the quintessential Manchego style using concrete and tinajas instead of barrels. An exceptional winery. GV (Ferrán Centelles)
