15 year old vines. Calcareous- clay soils, 750 meters above sea -level. Continental climate.
Yield: 4000 kg/ha.
Harvest: Manual harvest end of September 2018.
Fermentation: Natural fermentation in stainless steel tanks.
Malolactic: Spontaneous in amphorae (tinajas).
Barrel: 8 months in new French oak barrels.
Colour: Opaque with purple rim.
Bouquet: Intense aromas of blackberry, spice box mixed with hints of ground pepper and coffee bean.
Palate: On the palate the wine is velvety, full bodied and intense. The flavours of the black fruit are well blended with the soft and powerful tannins. The finish is long with reminders of chocolate and black fruit.
Temperature: 16-18 º C.
Food pairing: Pasta dishes, grilled meat, game, duck, ossobucco.
