The damned rabbits
A new red wine made from grapes of our vineyards that most suffer from the rabbits. They appreciate the high quality of the fruit just as much as we do. Unfortunately they are often faster leaving us with very low yields.
Ecological vineyards. Lime soils at 750 meter above sea level. Continental climate.
Harvest: manual harvest at the end of September.
Fermentation: Spontaneous fermentation of whole bunches.
Malolactic: in amphorae. No fining. No filtration. Minimum Sulpher.
Colour: Young, bright cherry red
Bouquet: red berry fruit mixed with cherry and a hint of plum.
Palate: juicy, young red wine with fresh acidity. Flavours of red berries, cherry and a touch of liquorice. Medium long finish.
Temperature: 14-18 º C
Food pairing: Antipasti, pasta, young cheeses, BBQ
