Grape variety: Malvar and Airén
Blanco con solera.
Literally meaning: the wine from way back then. And true to its´ name this wine was made in the old tradition of Gonzalos´ family: A white wine from a solera, aged during various years in two old oak vats, slowly letting it develope a flor yeast on the surface under which it aged, acquiring its elegant aromas and complex flavours.
The grapes for this wine come from old, organically farmed vineyards located at 750 meters on the Meseta. Lime soils. Continental climate.
Yield: 600 bottles.
Harvest: manual at the end of September.
Fermentation: Spontaneous and natural fermentation, with indigenous yeasts. Sur lie until bottling.
